Sponge Recipe for 10" round needed

Hi there

Cake making is not my forte at all! However my friend has asked me to make her 40th birthday cake for her party next weekend for 30 people and I agreed although tempered it with 'it won't be a professional job!' I agreed because I love her very much and she obviously asked me for a reason and I did not want to let her down.

So have any of you ladies got a lovely light sponge recipe that can easily be amended to fit a 10" round tin? Any tips for success would be much appreciated too!

I've only done this twice but it has worked pretty well

6oz SR flour
1.5 tsp baking powder
6oz soft butter
6 oz caster sugar
3 eggs

Sift flour and baking powder together, add all the other ingredients and beat with electric beaters for 3-4 mins till ight and fluffy

Bake for approx 35 mins at 170 / Gas 3, test for being cooked with a skewer inserted into the middle of the cake having no raw mix on it when it comes out. Sorry, bad English, tired tonight!
