Looking for a parsnip soup recipe please!

I'm really craving spicy parsnip soup, so I bought some parnsips but I have no recipe Hmm Can anybody help me out please? Grin

I make it normally by cooking onions off adding parsnips/stock boiling for 30 mins, pureeing down and adding a drop of cream. If I want it spicy I stir in a tablesppon of korma paste.

I make a spiced parsnip and apple soup which is delish.

Dont have exact recipe as I tend to be a bit of a experimental cook but something like this:

2-3 large parsnips
1 large eating apple (coxes are good)
1 small onion
veg stock
bay leaf
1/2 tsp cumin
1 tsp ground corriander
pinch chilli flakes
pepper/salt to taste
Fresh corriander.
cream

I basically soften the apple and parsnip in some oil before covering with the stock and bay leaf and leave to simmer until cooked.

Once cooked I blend until smooth.

Next I dry fry the spices then add the onion (finely sliced) to the pan along with a good glug of oil and fry until nice and crisp.

I return the soup to the pan heat through and stir in a glug of cream (season to taste).

I like to serve the soup with the fried onions ontop but you could stir them through. Garnish with fresh corriander.
