suet and wheat free dumplings ideas

Would love to do dumplngs but DH wheat free. Can't get out for suet. Any substitutions that work anybody?

A coeliac friend does them with a mix of potato, rice and cornflour and coeliac suet - I assume there is a veg version.

Thanks Melted. I have found this. anybody tried it?
Dumplings
100g (4oz) gluten free flour
1 teaspoon gluten free baking powder
Pinch of salt
50g (2oz) lard
Water to mix
Herbs (eg chopped sage) if required
? Mix lard, flour, salt and baking powder in a bowl.
? Add sufficient water to make into a stiff dough.
? Dust hands with additional gluten free flour and form
dough into 6-8 balls

I have just tried this out, but using butter as I had no lard. Worked brilliantly. Light and fluffy.

When you say 'mix' the lard etc. is it the rubbing in method?

Actually i just squashed it with a fork until it looked a bit suet like,rather than rub in. Then stired in the water. But yes it must be a bit scone-ish. I will try it with a bit of cheese in there I think.
