Vegetarian mexican ideas please

Does nybody have any good ideas for vegetarian Mexican-style food please?

I do the obvious like nachos and fajitas but would love to extend my range!

Vegetables that we love include:
sweet potatoes
normal potatoes
peppers
butternut squash
carrots peas sweetcorn

dp and I love mushrooms but the girls won't eat them.

None of us like aubergines or courgettes.

I hate tinned tomatoes.

Any ideas muchos appreciated. :)

I never trust Nigella entirely and would deffo tweak anything of hers - or not follow a recipe at all.

My favourite food in the whole world is plain old (black) beans and rice. There are various seasonings - but the more "authentic" recipes are really simple - maybe some bay leaves or turmeric or something.

Add some guac and sour cream and salsa.

Beany heaven.

Love that too - guess what though? DD1 won't eat black beans (OR kidney beans) either! Ponders how Mexican-esque chickpeas would be...:)

Agh - I wish I could believe you but none of us are fond of courgettes. Sorry.

In fact, for vegetarians we are quite fussy! Love nearly all veggies but not tomatoes, courgettes or aubergines!

Moroccan Vegetable Tagine

It's a long list of ingredients but the flavour is immense. I usually serve it with cous cous that's had a little lemon tagine paste mixed in.
You could swap the tinned tomatoes for stock, the tomatoes are not noticable due to all the other strong and sweet flavours.

Bean chilli?

Gah to the raisins in a savoury dish but easy to leave out.

Won't eat black beans?!

There must be some kind of child exchange somewhere. You could leave her back, see if you can find a model that understands about black beans. :o

(only joking, my dd1 is also vv fussy. Luckily black beans are one of the few things she really likes)

chickpeas won't work. Black-eyed beans are the next best thing if you were going to use black. Will she eat them? You'd have to add a few more things to make it tasty though - maybe more of a black-eyed bean chilli.

Then next day it makes a lovely quesadilla filling. Nom nom.

I'm not mad about kidney beans either. And don't get me started on the vile butter bean!

I'm not even a vegetarian, my pulse obsession is so unnecessary.

What about pinto beans? Those are the gold standard for chili here.

Dd1 will eat chick peas, lentils, butter beans, cannelini beans - but not black, black eye, pinto, borlotti or kidney - gah!

So no Mexican beans!

I've made burritos with black eyed beans instead of meat. Yum. :)
