Fudge that will set recipe

I'd like to make fudge to give to people for christmas, does anyone have a recipe that works, as i've never managed to get fudge to get.....

Have you a fudge thermometer

If so this one works
1 can evap milk
2lbs sugar
8oz butter
Flavours

Melt then boil to soft ball stage, cool, beat & pour to set

Drop some of the mixture into a glass of cold water, if it forms a ball of fudge then it's ready.

I have learned the key to fudge. The true holy grail.

Do do the ball in glass of water thing, then beat it with a wooden spoon for about 10-15 minutes, until it is cool, then spread onto tray to set. Do not put it into the fridge at any point.

You don't need a thermometer. It should take about 20-30 minutes to get to soft ball stage. You should stir for the whole time.

But don't forget the beating while cooling bit.

Looph is right. The beating is key. Best done with a wooden spoon and until the mixture gets really thick and creamy and tRts to set on the edges.

I would get a sugar themometer if I were younas I get very impatient without it and tend to stop boiling it too soon!
