Gingerbread house

This is probably a very stupid question but are gingerbread houses merely for decoration or are they meant to be eaten? I've often wondered as surely being out in the air they go stale pretty quickly?

We eat ours; not all of it though as it was far too much.
I cover them and only get them out to show visitors etc, then it is demolished:)

So how long from baking and assembly/decorating it do you think it would keep?
