I used this one although had no lemon juice so just left it out.

I topped mine with cherry tomatoes. Yum

I have't tried freezing it...Maybe make a dry run and pop a bit in now and ge it out in afew days...if it survives that I'm sure it would be ok for a few weeks.

Thanks moonface I'm also wondering if you could make it with yeast instead of salt?
