What can I do with two rindless lemons

I have finally had time got around to making the Christmas cake and pudding, but have got the inside of two lemons left over having put the rind into the cake and pud.

I hate wasting them and usually they just end up in the fruit drawer of the 'frig decomposing.

What can I do with them that's quick and easy?

(I know you are supposed to put the zest in the cake but it will be fine without.)

Fraid not new at all!

Had thought of lemon drizzle cake, but it really does need the rind!

I was also thinking about slicing them for my gin, but was just wondering if there was anything more interesting to do with them!

Lemon juice is great squuezed on cut up apple and banana. My DC much prefer it to normal cut up apple and banana, anyway. Thanks, Hugh Lardidah - Whatnot.

Slice, freeze and then put in G&T.

put in smoked salmon carbonara/risotto/paella/other fishy item

make mulled wine and put it in that (should be orange really but have used lemon before)

Thanks folks Grin I've sliced them and frozen them but I'll keep the other ideas for next time. And later I'll make LDC with the other two!

To clean the microwave -put them in a bowl of water and let it boil
or put them in the cutlery tray in the dishwasher
