Pre-preparing meat for roasting

I have a boned shoulder of lamb, that I want to stuff and roast for dinner in two days' time. It is in a sealed wrapping and is dated for a week's time.

Can I stuff it today and let it sit in the fridge for two days until I cook it? Does unsealing the package change the use-by date?

You could prepare the stuffing and put it in the fridge. I don't think I'd stuff if until just before it was cooked.

The stuffing will absorb blood from the meat, which could possibly affect its keeping qualities.

Im sure itll be fine. You can buy stuffed joints so in essence yr doing the same thing.
