Jewish way with turkey stuffing?

Hi, am having some Jewish students for Thanksgiving this year, and every turkey stuffing recipe I turn up has either bacon or sausagemeat in it. I eventually found one with ground matzohs but the local deli doesn't stock them. They're not Orthodox, just not keen on pork. I'd be grateful for help for tasty, fatty alternatives; turkey is dry, even with brining.

I made Sarah Raven's pecan apple and celery stuffing last year and it was lovely. Ingreds are shallots, celery, bramley apples, pecans,breadcrumbs,parsley, thyme, powdered cloves, ground cinnamon, oranges, garlic and butter. Can post full details if you are interested.

To prevent the turkey from being dry, parting the skin and putting a herb butter underneath it is brilliant. Keeps it really moist if its a relatively decent bird.
