I made DD2 a birthday cake on Friday for her party which should have happened today but DD2 got a tummy bug so we cancelled and rescheduled to Thursday.
It's a sponge cake (4 eggs, 8oz flour/sugar/unsalted butter) in 3 layers made with strawberry puree, orange juice and blueberry juice sandwiched with sugar syrup and covered with fondant icing. It was supposed to be a rainbow layer cake but the colours are very minimal/grey (in the case of the blueberries)

Will it keep until Thursday? Or should I make another better cake?
