would I know if the bacon had gone off?

It had a use by date of 9 Nov but was in the freezer until about a week ago so I reckon that buys me some extra time, no? And it smells alright - WWYD?

Open it and smell it, and if it smells off, or the fat has gone yellowy, bin it. Cook a bit and see how it tastes. Due to the salting, even in the freezer it can go rancid after a certain time. It's why bacon has a shorter storage time in the freezer than pork.
