Help! They were 10 for £1 in the Market. Turns out that DH also thought they were a good bargain and had brought a load earlier in the day. What can I do with them!

When I have a surplus of peppers I tend to chop and bag them and stash in the freezer. Great for using in chillis, stir fries etc.

Cool thanks, will try that, also going to attempt putting them in jars of oil. Guess what MIL will be getting for Xmas?

I serve them as a side dish or a warm salad - for four people you need four peppers.

Core/seed them then slice thinly and fry slowly in a generous amount of olive oil. Season with salt/black pepper and any herbs you have to hand/like. When they're soft, turn up the heat so that they brown a little. Just before serving, add some wine vinegar and cook that off.

You can also add a sliced onion and cook that in - get this brown as well - or chopped chillis.

If you add a generous handful of chopped, fresh coriander this makes a lovely pasta dish - just mix in with cooked pesto.

Sounds great Because. If I have that one night this week and freeze/jar the rest I might just be able to get rid of them all. Now about my 7 aubergines..... :-)

i was coming on here to suggest jamies pepper chutney too. I've used big heaps in chillis and goulash etc too.

Make a lovely pepper and almond dip/spread. Especially nice with red or orange ones.

Can't remember the exact recipe, but it's roasted peppers, ground almonds, olive oil, garlic and seasoning, all whizzed up. Possibly a squirt of lemon juice in there too.

I made the chutney at the weekend and used red and green peppers and it looks v Xmassy. I will be giving it away as Xmas presents.

Tastes good too! A bit like spicy, grown-up chilli dipping sauce.
