Lunch Box Cold Pasta Recipes

I am starting to run out of options for creating new sandwich ideas for my DD's lunchbox at school and would quite like to send her with some pasta. I have sent her with tuna pasta (penne, tuna, mayo and a bit of sweetcorn - served with cucumber on the side) which she enjoyed.

I tried making pasta with a tomato sauce last night but within a couple of hours of being in the fridge in its tupperware bowl, it had went all dry and stuck togther (so DD is off to school today with a sanwich! Bless her, she asked if she could have the pasta for her breakfast!!). Any ideas on good pasta receipes that can be enjoyed cold but won't go all dry and stuck together overnight? Smile

Pesto works well. You could also try a normal vinaigrette with some tomatoes or veg.

How strong a flavour does she like? I sent DH into work today with a pasta salad with amongst other bits, homemade tomato chutney and balsamic vinegar stirred through, a little ex v oo stops it sticking together too.

My DD likes a little caesar dressing on her pasta salad.

If my pasta and sauce goes dry I just stir in a bit of water and mix it up till it unsticks. X

Tinned salmon works too for cold pasta - balsamic vinegar + olive oil stops sticking.

I also do ham-sandwich-in-pasta-form, ie, chopped-up ham and chopped-up cucumber mixed with pasta.

Noodles work quite well too. Use soya sauce and sesame oil dressing. sliced up omelette, ham, chicken, tofu, Shiitake mushrooms, grated carrots. Anything goes. Smile
