Bean salad recipe

Has anyone got a recipe for a mixed bean salad? Am thinking that one with a minty dressing would be nice.

Mix some kidney beans with some falgeolet beans and canellini beans (or any other beans for that matter). Dice some red pepper and add it to the mixture.Add some crushed garlic and finely chopped ginger and spring onion. Then add a splash of soy sauce, sesame oil and olive oil.

When I first made this, DS (4 at the time) asked "What is that delicious smell?"

I know you asked for one with minty dressing so you could use the same bean mixture and use the following dressing;

Chopped mint
Lemon juice
Olive oil
Balsamic vinegar

I don't really measure the quantities so just mix it until it looks right to you.

have you tried just black eyed peas?
We serve them cold with onions, parsley, olive oil and lemon, you can add tuna as well it goes well with it.

minty would be lovely, parsley coriander also

finely chopped onion, garlic, chili / ginger
beans your mix
lemon juice, oil and all that

these sound wonderful, I love bean salad but rarely make it. I know you can freeze plain cooked beans - what do you think about freezing the bean salad with dressing? Would be great to take out of freezer in the morning for my packed lunch. Maybe just with dressing as chopped peppers etc might go soggy. Anyone tried it? Dried beans are sooooo much cheaper than canned, I'm thinking could make about 20 portions for the freezer for the price of a couple of cans or one posh bought portion from M&S!
