My jam hasn't set. Anything I can do?

I am making jams to give as Christmas gifts, I am new to it this year. I made blackberry last week and it was a success, but last nights Spiced Apple has not set.

I followed this recipe allrecipes.co.uk/recipe/8053/apple-jam.aspx but I didn't have any pectin so I put the apple skins in a muslin bag and cooked with the apples for the first stage of the recipe.

The recipe does not say to boil for very long, could it be that it needs boiling for longer? Or is it something to do with the pectin?

Could I empty it back into a pan and re-boil?

The taste is lovely, it's just too runny!

You could try adding the juice of an orange or lemon. I use that in strawberry jam 'cos they don't have enough pectin on their own to set.

Yes, empty back into pan, wash and resterilise jars. As tb says, try juice of a couple of lemons, add a little more sugar if its a bit too sharp, then reboil. You could try jam sugar - that contains pectin.

Thank you! I did add a table spoon of lemon juice (bottled) at the start of the cooking, but I'll try adding more and reboiling.
