Okay bought some from farmers Market today. Have gone to stuff cavity and pretty sure livers are still in? Which is fine I don't like offal but I can pick it out. But it dawned on me was I ment to do anything else to it? Remove anything?

Proberly sound really dim but although I cook from scratch a lot have never actually roared a whole bird!!

my favourite food.
great Nigel Slater recipe from the guardian last year.
partridge roasted on a bed of Pumpkin.

Peel pumpkin , cut into thick wedges, into roasting tin with a good slather of butter, salt and pepper.
Roast for 20 mins or until just a bit brown at the edges.
Plop partridge not top with some chopped up bacon and chopped up sage. Loads more butter on birds, salt , pepper and a really good lug of alcohol of choice, white wine, sherry, Marsala, brandy, take your pick.
Roast in oven 30-45 mins till birds cooked.
It tastes fantasic, and is very forgiving if forget it in the oven for a while.
