urgent: vegetable crumble or vegetable soup

Seeing as I've got loads of vegetables rotting in my fridge I've decided to cook them all in one go. Was thinking of a vegetable crumble but not sure if this is a bad idea and I shouold stick with veg soup. My kids are happy with soup. Just seems a bit boring and a bit of a waste of the veg.

I've got mushrooms, red pepper, yellow corgette, red and green cabbage carrots, potato, brocoli and sweet potato

Which do you think I should go for and if its the crumble what do I need to do - does it need a cheesy sauce or something?

Help
Am chopping now!

Veg crumble sounds exciting. Wouldn't have thought a cheesy sauce was essential.

If I do a veg crumble, I fry up the veg with whatever herbs or spices I'm using, throw a tin of chopped tomatoes over it, bubble it for a few minutes then put it in a dish and put the crumble topping on. You need a bit of liquid otherwise it all gets too dry.

Ok I'm going for the crumble. Got the "fryin" stuff in the frying pan and the sweet potato, carrots, brocoli and spud in the steamer.

Haven't decided about the sauce yet.
Thanks for the tips
Will let you know how it goes

Can't decide between a bit of veg stock or some chicken stock. Would have to defrost it quick though!

Binned them? When you could have eaten them? Veg crumble tastes nice with fish in it ...

Katherine · 16/09/2005 18:22

What bin vegetbles! Never. Our piggies would never forgive me. Mind you they may still get them. Its in the oven but I'm worried its just going to be boiled veg with mush on top. Still we can but try. You never know....... It looked very pretty anyway
