Hi. On Saturday I have to deliver a 40th cake (doing the whole 4 0) thing and a two tiered christening cake.

I have an interview that will put me out of action all Wednesday afternoon and I'm also busy all day Friday.

The 40 th is a choc cake covered in white choc icing with a road on the top with cars on the road and 40mph speed limit signs round the base of the cake. The christening cake is two flavours - plain maderia and choc with hands painted on the sides and the childrens' names on the top of each cake.

Today I am doing the childrens' names and making the cars and speed limit signs so they're all done and can just be stuck on.

Bearing in mind the remainder left to be done and the fact that I want the cakes as fresh as possible when and in what order would you make and ice the cakes?

imo i would be inclined to bake, fill and bottom ice the cakes tomorrow.
i would also ice the cake boards at this point.
the cakes will be fine left in standard cake boxes whilst they're drying out.
on thursday i would apply the top layer of icing.
as you have already made the decorations they can be applied to the cakes on either fri night or saturday am.
