Fishcakes!!

DH has said he'd love fishcakes for dinner - great I've got some frozen salmon and cod but I've never made fishcakes before - has anyone got a good recipe?

Cook the fish and flake roughly. Mash potatoes. Mix mash and flaked fish together with finely chopped parsley. Season. You may find that you need to add quite a lot of salt as salmon is quite sweet.

Egg and breadcrumb. Shallow fry.

Serve with boiled spuds, peas and loads of lovely home-made parsley sauce. Yum.
