Need ideas for meal to take on holiday!

Going to Centre Parcs for my 30th with family. As I am a control freak quite organised I have been put in charge of food shopping. We're there four nights so four main meals needed. We are eating out for my birthday and one other night, leaving meal planning for two more.

I was thinking a roast for one night, and the first night having something I've made in advance and that can just be heated or cooked. There's 6 adults and my 2 year old DD to cater for. I'd quite like something a bit special/elaborate as it'll be the first night of holiday and I won't have seen my family for a month or so. Was thinking something that would go well with lots of wine as well.

Constraints are DH - no fish or mushroom based things (can have small bits of mushroom in), my mother - not too spicy.

I don't mind complicated or elaborate as long as it can be done in my kitchen before we go...

How about chilli? I know it's spicy, but with guacamole and sour cream that should cut down the spicyness for your dm. Good for with strong winter reds such as Gigondas, Hermitage etc.

For pudding you could then have that chocolate tart from Jamie in the US that's served with the choc/chilli powder and really good vanilla ice cream.

This Spinach & Sausage Cannelloni is lovely and can be made before hand and transported there. Just need lots of salad and red wine Smile

lasagne - could make bolognese day before and then assemble there. or ham (nice gammon) egg, beans and chips. not elaborate though...wouldn't fancy doing a roast there as you will have to stay in watching it and ovens are a bit poxy. chinese take-aways have always gone down well
