Need help finding a recipe.

When I was at school, sometimes for pudding we used to have a millionaire shortbread style thing, but it was a chocolate shortbread base with a layer of bright green mint 'stuff' then a layer of chocolate on top.

Does anyone have a recipe for such a thing?

I've tried Google but not had any luck so far.

I wonder if you could just make this Peppermint Cream mixture and then use it as a layer on the shortbread and then cover with chocolate??

Yes I have a recipe in Tom Norrington Davies Just Like Mother Used to Make, called:

Mrs Went's Squares

for a 20.5cm baking tray
Base:
125 g soft butter plus extra for greasing
1 level tbspn cocoa powder
125g sdelf raising flour
25g crushed cornflakes
50g soft brown sugar
First topping:
125g icing sugar
1 tbspn peppermint essence
2 drops green food colouring
Second topping:
200g bitter chocolate

Preheat oven to 180c/Gas 4.Grease baking tray and line with parchment. To make base, melt butter in pan large enough to hold all dry ingreds, fold these in to melted butter and mix until you have a fairly sloppy looking dough. Press into baking tray and pop in oven for 20 mins. Allow to cool completely before proceeding.

Mix icing sugar, peppermint essence and food colouring with 2 tbspns cold water, spread the paste over the biscuit base and chill until icing set.

Then melt chocolate with 2 tablespoons water and cover the icing. When the chocolate has set you can cut into squares.

I'm thinking what with the bright green layer they might make a good Halloween party food, cut into bitesize squares. I might experiment with making a bright orange, orange flavour variety as well.
