OXTAIL!!!???

Hello - does anyone have any good links / recipes for oxtail stew - have got some to cook and haven't really ever cooked it before?

any tips appreciated... Grin

OOoh we just had some.
You stew it down, cook it really slowly, with the usual onion/garlic/bay/water, maybe a bit of red wine.
Pick the meat off the bones/sinewy bits.
We then froze that mixture and had a sort of onion soup - fried onions then the mixture heated through. It was so so delicious, far more like stew (and NOTHING like Heinz Oxtail soup, which was my last brush with it!).

Usually do it in pressure cooker like Unprune but add tomatoes / worcester sauce type stuff and a load of beans too - you get loads of flavour then not loads of meat but all DS' love it. Best to cook one day and serve the next too.

Which beans don't disintegrate too much please?

I did it once in the slow cooker for about 12 hours, it was very rich but nice.
