AARRRGH! I CAN'T MAKE CUSTARD!

I have tried AGAIN tonight to make my own custard, and yet again it has curdled. Plunged saucepan into cold water and whisked like crazy, and it sort of recovered, but only temporarily....

Does anyone have any tips or an idiot-proof recipe??

Thank you - (Will make it my New Years Resolution to perfect custard!)

pour the milk/cream slowly into the eggs and whisk like crazy whilst continuing to pour. Once it's all in switch to a wooden spoon and keep stirring. As soon as it coats the back of a spoon and you can draw a line in it its ready.

Your pan is on too high a heat. Turn it down to it's lowest, lowest setting. Do you put a table spoon of cornflour into the eggs and sugar? That can help too. Keep trying, it's so worth it. Cybbo, no offence but compared to the real thing Ambrosia sucks ;-)

If I use Bird's custard powder I call that 'making my own custard'.

I actually made it properly once. Wouldn't bother again.

I spoon a pile of cornflour in, some egg yolks, some sugar and some vanilla and mix to a paste. Then add milk while whisking and keep whisking constantly while heating. It will go very frothy but I keep whisking until the bubbles go and it's as thick as I want it.

Agree to add cornflour - and I've seen that in a French semi-professional book, so I don't feel guilty about cheating.

Don't get me wrong - I LOVE ready made custard but really want to be able to make my own if I want to! I will not let the custard control me, I am master of my own destiny etc etc Grin
