Stuff it in chicken, few sprigs of thyme and wrap streaky bacon round. Layer sliced courgettes and tomatoes in a baking dish and rest the stuffed chicken on top. Bake for 40-45mins.

Guess what I'm having for tea Smile

ooo yum! do you serve it with anything else?

On a puff pastry tart with roasted tomatoes, red peppers or red onions (or any slightly sweet vegetable)

In a risotto with leeks and spinach (or peas, or butternut squash)

Baked whole and placed on salad (brasserie style), ideally with croutons or toast

Stirred into cous cous with roasted veg (too similar to the pasta idea probably)

In an omelette with any of the above veg

A blob of soft goats cheese is fab stirred into spicyish winter veg soup

Tonight with mash, and maybe some green beans for DH. Goes nice with roast potatoes, or crusty bread.

Had stuffed roasted red peppers the other day, with goats cheese on top. Stuffing was a cherry tomato and basil compote. Twas lovely.

Toasted on a baguette with chorizo. Smile

Someone's already beaten me to the puff pastry suggestion. Definitely with roasted tomatoes or red onion. Bloody gorgeous.

LoopyLoupGarou · 14/10/2010 20:08

mmmmmmmmmmmmmmmmm anything with onion marmalade. yummmmmmmmmm. :)

nikki1978 · 14/10/2010 20:18

I had a lovely starter once. You get a rectangukar sheet of puff pastry. Score a 3/4 inch border then put goats cheese and some caramalised red onion in the centre, drizzle with olive oil and bake for 20 mins. Delicious and easy!

roastedfox · 14/10/2010 20:25

is it nice with leeks?

reckon it would be, yes.

Deep fried egg and breadcrumbed

On a plate with olive oil and black pepper or ground cumin over

Also with runny honey drizzled over - not too keen on that one.

Oven baked in the centre of a fig

In a chumk out of my hand while standing by the fridge looking for something 'proper' to eat.

OrmRenewed · 14/10/2010 20:53

A goat's cracker?

IMoveTheStars · 14/10/2010 20:55

Dear gods tb.. I thought you meant to deep-dry and egg [vomtastic] Grin

wow.. a new culinary horror Wink

It's really good with roasted beetroot in a salad, esp if you add in some puy lentils.

SandyChick · 15/10/2010 19:27

Caramalized red onion is my favourite with goats cheese.

Grill/oven bake the goats cheese until it's bubbling. Serve on either a toasted English muffin or crumpet with lots of caramelised red onion and a rocket salad.

Mmm I'm hungry now Smile

Coming to this late, but I made goats cheese, fig & red onion marmalade tarts from the Sainsburys mag yesterday and everyone loved them. Basically ready rolled puff pastry, spread with red onion marmalade, quartered figs and crumbled goats cheese, drizzle with olive oil & season with black pepper. Brush pastry with beaten egg. Gas mark 7 for 15 mins approx - they were delicious!!

We had beetroot & goats cheese stacks at a dinner party not long ago which was also a combination made in heaven!
