Nigella's recipe for cupcakes is great. 125g sr flour, 125g soft butter, 125g caster sugar, 2 eggs, 1-2 tsp of vanilla essence, a splash of milk and blitz up in a magimix. 170 degree oven for 10 mins (from memory as we're moving house and I've packed the cook books). Light fluffy and lovely. Frosting I always make half butter, half cream cheese, icing sugar and vanilla essence. If you are piping it use a teeny tiny bit of milk to lightening up. If you want to colour it I'd use gels not liquid.

Happy Halloween!

Ditto the recipe above - and we decorated ours last year with glade icing tinted orange, green or black with Halloween haribo sweet on top (jelly bats, skulls and the like)

I'm doing Halloween cupcakes as well since I bought some cases in Lakeland Blush

CitrusZest · 14/10/2010 22:07

I made this recipe yesterday and they were lovely. I didn't make the icing, but I'll try it next time.

Fab cupcake recipe

I'm going to do some for Halloween iced with regular butter cream with a M&S eye-ball sweet on the top.

Great Idea Citrus Zest.. I must get my chocolates soon tried to do an ocado for mini pumpkins but they were sold out !!.

I am definetely leaning towards orange icing. Though I liked that lurid green lurid that Nigellla did last night.

bbc good food web site has lots of recipes and they always work with me. I've made just 'normal' cupcakes in the past (can use exciting food colouring if wish) with equal quantities of eggs, sugar, fat, flour and then decorated with haloween themes (like blood shot eye balls, witches faces etc). I also once made a haloween cake which was decorated with little home made meringue ghosts with silver balls for eyes and painting melted chocolate on thin square biscuits and putting them on the top like gravestones (with 'RIP' iced on!). Think that mergingue/gravestone decoration idea I got from good foor actually [hhmm]

I like the biscuit idea angel top tip !!
