Veg Soup. Can I use any veg mix?

Hello,

Sorry for this, probably daft, question.....

I have quite a bit of veg left over from my weekend shop which isn't going to last much longer.

Can I literally shove any mix of veg in a veg soup? And just add some stock and seasoning?

Think so yes just might need to be aware of any strong flavours.

Yes you can, maybe even with a handful of broth mix or pearl barley. Some veggies do pair up better for a more delicate taste to soup, but to me personally, a chuck-it-all-in veg soup can taste just as good!

If I do a chuck it all in soup, I tend to leave it as small lumps rather than blend so you can taste the separate veg rather thn being all one flavour.

Sometimes i'll do 2 soups if the veg are a bit random, e.g. one mainly root veg and one more mediterranean (tom, courgette, aubergine etc)

What veg have you got?

I find cauliflower overpowers most veg in a soup so leave it out nowadays
