fridays are a bit of a race, get home from work, pick up DD, have swimming lessons.
I normally get my tesco delivery on friday evenings So the fridge is half empty, bread is stale and i dont have time to cook.

i really need inspiration for quick, cheap, store cupboard type thing, that can be thrown together and doesnt make much washing up.

We are both getting a bit bored of 'things on toast'

On our busy night I make a soup or even a bolognaise the night before. Leave in a sealed pan. The next night, just put it back on heat until thoroughly heated through.

For the soup, just slice some crusty bread and serve. For the bolognaise, just cook some spaghetti (or other pasta) and serve.

You need to do a bit of work the night before but it is definitely worth it when you come in late Smile

something that has been in the slow cooker all day.. beef stew? chicken casserole?

or a stir fry (the lazy ones that come all chopped up ready to go in the wok!) and 'straight to wok' noddles?

Our nights like this I do:

Jacket potatoes, put on low heat before going to swimming. Gorgeous smell when you come back.

Omelette for DS, dippy eggs for DD

Pasta with tomato sauce ( premade - keeps in fridge a week ) and grated cheese

Simpler the better on nights like this IMO.

Boil pasta. Open can of corn. Open can of tuna. Open tub of sour cream/creme fraiche. Mix all together. Eat.

Do you have a slow cooker? Ours is invaluable on days like those

Our favourite quick meal in pancetta cubes in garlic olive oil blasted in oven for 10 minutes with either linguine or spaghetti and chopped fresh parsley.

It was in one of Nigella's books and is suprisingly tasty.

or you can get asdas frozen garlic for only sixtyfour pence Waitrose frozen garlic for £1.79 which is very handy and much nicer. Smile
