Making a christmas cake with Amaretto....

Got a great tip on here to feed christmas cake with Amaretto. I've always soaked the fruit beforehand in brandy and then fed with brandy once cooked.

Now for the stoopid question. If I am to feed it with Amaretto once cooked do I also soak the fruits in Amaretto and leave the brandy out completely?

i think that i would be inclined to soak the fruits in amaretto as well
does the cake also have ground almonds in the recipe?

I am making it up a bit this year. I think I will prob incl some ground almonds as well as some whole ones, as I just love them so much. I love Delia's recipe but have been looking at lots and deciding what I really like in them, and this year have decided its the year of squidgy dried fruits like organic apricots and a real almond taste as I adore it.

As the cake itself will be so almondy, I am wondering about forgoing the marzipan.....but don't think I can! One of the family's favourite things are the leftover marzipan which I roll into wee balls and dip in dark choc. DS could eat a whole trayful if I let him......

def agree that an xmas cake isn't an xmas cake without the marzipan
do you make your own marzipan?
and what are your plans for the icing?

I've never made my own marzipan - is it worth it?

Icing - I think I will go unrefined fudgy stuff a la St Nigel.
