Chutney experts advice please

This is the recipie I am using it is HFW's Glutney But not got quite the right ingredients in, will this work?

Questions below in bold

1kg courgettes, unpeeled if small, peeled if huge, cut into 1cm dice (or use pumpkin later in the season) can I use butternut squash

1kg red or green tomatoes, scalded, skinned and roughly chopped (or 1kg plums, stoned and chopped)will frozen plums be ok

1kg cooking or eating apples, peeled and diced

500g onions, peeled and diced

500g sultanas or raisins can I use dates

500g light brown sugar

750ml white-wine or cider vinegar, made up to 1 litre with water

1-3 tsp dried chilli flakes can I use fresh chillis

1 tsp salt

For the spice bag

1 thumb-sized nugget of fresh or dried ginger, roughly chopped

12 cloves

12 black peppercorns

1 (generous) tsp coriander seeds

A few blades of mace

Will frozen plums work instead of fresh? Do they have enough pectin?

I've made this chutney, and had to do a fair bit of tweaking as I didn't have everything listed.

I would say all your substitutions will be fine. The pectin isn't really an issue here, unlike say jam-making. The frozen plums should be yum.

I ended up using a mixture of plums and nectarines for that part of the recipe, and it still tastes pretty good.

Definitely improves with a few weeks maturation. Smile

I think your substitutions sound delicious, but as butternut squash and plums are going to be sweeter than courgettes and green tomatoes, I think I might reduce the sugar content a bit and alter the spice mix a little. I think I might lose the cloves and have a little cumin instead, possibly cardamom and a little allspice - this would make it a little Christmassy tasting.

Thanks both. I made it on Sunday it is nice, but with hindsight I could have upped the spices a bit as quite sweet and mellow.
