Cooking lamb chops

I love lamb, and normally cook a shoulder.
I've never been successful with chops- never know whether to grill them/oven cook them. I don't like pink lamb, but mine end up like burnt offerings.
I like the idea of cooking them in a sauce so they're not too dry.
Any suggestions- pork too!!!!

Braise them after sealing in a frying pan, add water, couple of bay leaves and cook over low heat until tender. If you toss them in seasoned flour first you will get a nice gravy. Serve with mash.
