Dessert recepies suitable for Diabetics

I have guests soon, one of them is diabetic, what sort of desert can I make (that does not contain fromage frais or yogurt please).

Perhaps an eton mess type of thing - it's not too sugary if you use berries (frozen ones available year round but blackberries still around I think), whipped cream and a small amount of meringue.

Or just fruit and cream - you could do roast peaches or baked apples with cinnamon etc. They don't need much sugar added to be very sweet.

Or a cheese board with nice fruits and veggies and crackers.

Or fruit dipped into dark chocolate?

Is she type 1? If yes she will be using insulin and can adapt her insulin to what you feed her, therefore you can probably give her whatever you like.

I am type 1 myself - let us eat cake! Can you check with her?

If she is type 2 and diet controlled then yes it's a bit more tricky...

Dilbertina, he has to inject insulin, but I remeber him saying that he could not have drinks even if naturally sweetened with fructose. Does that depend on the time spent between the injection and the actual meal? Or maybe I just misunderstood?

Hmmm, he could be on outdated insulins which would restrict diet far more. The more modern insulin regimes basically provide background insulin all the time and then you bolus more for whatever it is you eat - either via injection or infusion pump. Tell him some random woman on internet suggests he talks to specialist about more flexible modern methods!

Unless he meant even fructose would raise his blood sugar and he would need more insulin...

Tell him I especially recommend the pump, as then you just press a few buttons rather than having to do an injection for every morsel, I found it gives much more freedom to eat cake.
