vegetable oil, I have olive or sunflower, which would be the best substitute?
Disclaimer am fairly new to cooking!

sunflower i should think, olive would have a stronger taste

Sunflower - cheaper and more bland tasting, definitely best option.

Neither.

Cook the sausages in the tin for 5-10 minutes first, then they release their fat and then you pour the batter into the really hot tin and fat.

It will be delicious.

Sunflower, definitely. You're looking for a mild-tasting oil. Olive is too strong (and also the expense not worth it!)
