So, I have 8in sandwich cake tins and the recipe says use 7in. What to do? Should I make double the mixture and use the rest for cupcakes?

Help, I'm such a useless baker, it's DSs first birthday soon and my mum is 500 miles away.....Grin

for an 8" tin I use 225g of everything.
not sure how that measures up to your recipe.

Oooh, I'll use yours then!

So that's 225g of sr flour, butter....

That's for two 8in tins, to sandwich together, yes?

7" Recipe plus 30% would fill your 8" pan.

you may need to adjust cooking time up a bit? check as normal with skewer in the middle, may need an extra few minutes.
