fudge gone a bit wrong- please help

tried to make fudge but didn't beat enough before putting into tray - so should I melt it, beat again until it goes grainy - and then try again?

At the moment it resembles rather sticky toffee, not really what we were going for.

didn't think beating was what made fudge fudge? Thought it was about getting it hot enough to 'soft ball' stage? Have never managed to beat fudge into submission :)

How was it at the soft ball stage? If the ball was too hard and toffee-like, sounds as if it may have been boiled too long, and gone towards the hard ball stage.

Yes you can scrape it back into the pan, and reboil it after heating it slowly over a low heat to make sure all the sugar has disslolved.

Then after the soft ball stage, you need to let it cool a little before beating, and then beat until a thick 'ribbon' trails across the surface before putting in the tin. It should sink in but not as it falls across the surface.

Too soon and it won't set, too late, and you'll have to eat it out of the pan!

Thank you. have got sugar thermometer so I know I boiled it to right temp, just forgot that you have to beat it. The kids are happy with it too soft and I can't be doing with boiling it up again, first batch burned in pan.

Always forget how hard it is to get fudge right.
