Pesto with cheddar instead of parmesan?

Would this work? I have to feed 2 picky siblings tonight and I think pesto might be one thing they'll both eat but I only have cheddar!

Make the pesto with no cheese then sprinkle the cheddar on top of whatever you are making? Don't think it would work in the pesto.

I have a pot of cream cheese to mix in to some pasta but need to add something to it before the children will eat it.

i make a pesto like sauce with parsley and walnuts intead of basil and pine nuts, cheddar would work fine with this

Please don't!

Use the cream cheese instead, not too much, but it can work with basil etc. Much better than the cheddar (which I love, btw)

Do you mean you are going to make pesto from scratch with cheddar? Or just put cheddar on the top of pesto from a jar? The first is definitely odd, but the second is fine (and really quite yummy.)

Well, you'll all be pleased to know that I just mixed some basil into the cream cheese and mixed with pasta. No cheddary pesto here!! All three children ate it and one even said it was really yummy - though I think she just has very good manners Grin. I will definitely make sure I have a few spare jars of pesto in the cupboard for next time!!

I know this is an old thread but I was googling and came across this article so thought I’d share incase anyone else Google’s this and reads this thread too. www.bonappetit.com/test-kitchen/how-to/article/pesto-out-of-anything which basically says you can make pesto with cheddar if it’s an aged one. (Basically needs to be very flavoursome to work). Winner, I know what I’m making for tea tonight!

Thank you Robose, very useful link. I tried to sow Basil in the spring but it didn't do well so bought 4 decent plants from the supermarket, half price as short dated ! that was about 4 weeks ago in August. I planted them in my greenhouse with my tomatoes and now I have LOADS :)
