Mouldy courgettes...

Just opened the pack and couple of gone mouldy at the ends - they are still in date. Is it OK to chop the bad bits off and use the rest? Only the end looks bad.

Chop the end off and see what the rest of it is like in the middle. Could go either way really.

You could always cut a small sliver and taste it.

My courgettes don't have dates on them - I grew them. Smile So never know when they go off except when they go obviously bad!

I would chop off the dodgy bit and eat the rest.

What are you cooking them in? I have just picked 10 of the damned things - was going to fry thick slices and serve with a mustardy vinagrette as a warm salady-thingy.

But that won't use up 10!

My favourite courgette recipe is a veggie shepherd's pie type thing - basically ratatouille, topped with mash, baked until the mash goes crispy (dot it with butter to get to crisp up)

Also it's nice diced into chilli or spag bol.

Corgette soup is the best way to use them up - and freeze in batches.
