Nice Sunday Lunch ideas please...

Looking to make a yummy feast for Sunday, but would prefer not to do a roast for a change.

Would prefer not to do a stew either, was thinking more along the lines of a all in one tray bake kind of thing.

All ideas welcome,

I like to do a nice piece of ham when we are ready for a Sunday change, with mashed potatoes and parsley sauce. I use the Nigella recipe which is basically put it in a massive pan of water with onion, celery, bay leaf, cloves and let it bubble away. Makes the kitchen windows steam up and it all smells lovely and comforting when you come in.
Plus then you'll have lots of ham left for lunchboxes etc the following week...

6-8 chicken thighs
1 Chorizo sausage cut into 2cm chunks
4 potatoes quartered
1 onion sliced
4 crushed garlic cloves
Half of a red & yellow pepper sliced
1 tin of chopped tomatoes
150 mls of chicken stock
1/2 tsp paprika
Seasoning to taste

Bake in the oven until everything is cooked through, serve with some crusty bread to soak up all of the juices - yum!

yy to Toad - we often have that or fish pie on a Sunday

pork chops go well in a traybake - Jamie has some good recipes - or fish - or chicken. try his website for inspiration. In fact, here's a really interesting recipe

If you're going to do Nigella ham, it has to be the one in Cherry Coke surely? Yummy :)

Or Fillet steak with Dauphinoise potatoes and green beans!! Oooooh, really fancy that now!

I love sitting round for Sunday lunch with family and I'm not a bad cook (toot toot) but I can't ever be ar*ed with the whole roast routine.

Pot roast chicken in good. Brown a whole bird in a casserole dish. Take it out and fry bacon, big chunks of onion (or small whole ones) and new pots and brown slightly. Pop the chicken back in, season, splash in a glass of wine or some stock. Lid on in a 180 oven for an hour. Take it out and take the chuck out to rest and put in a load of frozen peas (and a bit more liquid if needed). Cook on top of the stove til peas are done. If you are feeling indulgent, add in a dollop of double cream. Easy!

Or slow roast a shoulder of lamb with oregano and olive oil, covered for 3.5 hours at 160 degrees and serve with pitta, carrot and corriander salad, greek salad and tzatziki (sp?).
