Hi, I am looking for a good tip or a great book for pickling/pickled onions, I have a large sack of home grown shallots donated my dad.

I tried last year but failed to have any 'kick' to themHmm

help me please!

You can add chillies to the jar

Salt them for 24 hours first.

You can get special pickling vinegar with the spices already added. i add peppercorns to that!

Leave some of the pickling spices in the jar, not too many chillies, and they should be fab. I haven't done any pickling for years, but you've made me think . . .
