Cold roast beef....

Have some fantastic slices of rare-ish cold beef from yesterday. Seems too good to put in a sandwich and don't want to reheat as think now it is sliced it will go brown and dry.

Any ideas??

A beef salad of some sort?

Yes I'd probably make a Thai beef salad with leaves, spring onions, peppers, coriander and a thai dressing.

We have ours with chips and peppercorn or mushroom sauce.
