Recipe for a nice birthday cake for my MIL on a diet

My MIL is doing really well on her diet but me and DD want to make her something as my SIL normally does but shes away this year so its down to me :)

Any ideas welcome doesnt have to be a cake just something yummy and suitable for a diet

If it has to be cake, how about a fatless sponge/swiss roll with some sort of low fat 'cream' and fruit filling.

Not quite the same, but better than no cake at all.

Maybe make a bananabread 'cake' (you don't need butter, just a tsp or two of oil) and ice it with cream cheese mixed with splenda? Sounds odd but it tastes like cream cheese icing...

Or what about a pavlova - the meringue is fat free and lowish in calories (although very sugary) but instead of cream, put lowfat greek yoghurt (such as fage 0%) and fruit on top. Nice treat and can't be too many calories.

hummingbird bakery lemon & poppyseed cake - it has a small amount of butter, & doesn't use egg yolks so I reckon its lower fat - but I make it because it's yummy! scroll down to page 3 for the recipe

see here for ideas, there must be some earthly way not to make it look like a hospital basket.

I only say because I am dieting at the moment and I might cry if somebody brought me a cake! Perhaps your MIL is more balanced though Smile. The creamless pavlova might be a possibility.
