Very quick and easy veggie recipes please

I've really gone off meat. Live in a house full of males who love their meat and 2 veg, and recently just the thought of it is making me feel really sick. They still want it, so I'll cook it for them, but I'm looking for really easy veggie recipes I can rustle up for me, alongside their meaty ones. Today I ended up with poached eggs and steamed veg.

Have thought of pasta pomodoro while they have spag bol, or baked spuds... and then my inspiration ran out. I really love all vegetables, if that helps.

Make a risotto with peas, asparagus, broad beans, butternut squash, whatever. Then they have chicken with theirs if wanted.

If they are having a meat, potato and vege meal something really easy is to lightly blanch some asparagus and lie it in a small, shallow baking dish. Top it with some creme fraiche and then sprinkle with fresh bread crumbs and parmesan and parsley and grill until bubbling.

One of those long red peppers, stuffed with a mixture of mashed feta, finely chopped red onion, lemon juice and herbs is delicious and bakes in about fifteen minutes. Good with a salad or with lightly cooked mange tout, baby corn etc.

Also, stuff a big mushroom with garlic, breadcrumbs, parmesan and bake it in some butter.

Peas, lentils, beans and many other pulses are one of the best things are person can eat for all round nourishment and they can taste wonderful too, with the right prep!

My faves are channa saag (chickpeas and spinach curry), lentil daal, refried pintos, mashed black beans, chickpea stew, cannellini beans, and falafels. Havea good old internet search for recipes using those things and you won't be dissapointed, I'm sure! x

I am weaning the DC and DH off so much meat, by stealth. We still have it once during the week, eg toad in the hole and once at the weekend, maybe a roast. The other days we tend to have veggie pasta with either a tomato/cheese sauce for the kids, peppered and chillied up for DH and I with some added mushrooms, or cheesy/creamy sauce with spinach/similar, baked pots with prawns and/or tuna, omelettes and dippy eggs, homemade pizza and garlic dough balls.

If I have time we all like a tart, like a leek and cheese one for eg.

BelliG - those sound really quick and delicious - just the sort of inspiration I was after - thanks. Really want to try the pepper one.

Smash - you gave me an idea. I love dahl. I could make a huge batch and freeze individual portions, then have it with rice or chapatis - no cooking required.

Taffeta, I've been trying that, gradually. They have pasta pomodoro once a week, baked spuds with cheese and beans (they don't like other fillings) homemade pizza with fresh tomato/veggie sauce. They won't touch felafel but they do love humous so we could have humous and pita with salad sometimes too.

They eat chicken risotto, so the butternut squash idea is great.

Thanks - was in a rut of meat and two veg cooking. These are great ideas and maybe when they smell how good they are, they'll try them too.

I've been browsing vegetarian pie recipes today and found one for a vege and houmus pie which looked good. Will try and find it again.
