Bland chilli - what to add?

gingerkirsty · 25/09/2010 19:08

I've made a vat of chilli in the slow cooker, it didn't have any stock in it or any spices other than fresh red chillis. It is nice, but not exciting, and not actually spice either!

So, what to add?

Stock cube?
More chillis?
Chilli powder?
Paprika?
Red wine?

Any other ideas? Really need to jazz it up as it will do 4 meals for me and DH!!!

TIA :)

I should say that i followed a recipe from a slow cooker book, hence not adding anything 'extra'

Worcestershire sauce
Marmite
Chilli powder
Tomato puree
Gravy granules

Would lay off the red wine- it will make it taste too much like bolognaise.

Soy sauce

Tabasco

cumin

Tomato ketchup

Cumin! That's the chilli taste. Plus garlic, salt, black pepper. Bit of chilli sauce may be good. Paprika would taste good but not really much of the traditional chilli taste. Like Tethersend's worcestershire sauce idea too.

Paprika, ground cumin and ground coriander - fry them off first in a bit of oil to make them taste less raw then stir them in. Maybe a bit of sugar too to bring out the tomato taste?

I would def put stock cube in. Vegetable or beef.

And cumin. Cinnamon is good too! And very dark chocolate (70%+) is lush. Just a couple of squares.

Thank you! Based on what we had, I added:

Reggae Reggae Jerk/BBQ sauce (!)
Tabasco
Ground cumin
Bit of stock powder

Tastes MUCH better now so hopefully that'll do it!

Thanks all :)
