Beef stroganoff crisis!

Help!

I'm halfway through cooking beef stroganoff - have done the beef, the mushrooms and the shallots - just went to the fridge to get the creme fraiche and realised I've picked up fromage frais instead.

Confused

Will it still work? Will it separate and be foul and disgusting and I'll waste £10 worth of steak? Or will it be lovely and fine?

Try mixing a little bit of fromage frais with a little bit of stroganoff mix to see if it separates. If it doesn't, I would still only add the fromage frais right at the end and don't boil it as that will cause the curds to separate. You might need to add a bit of water as well to stop it splitting.

Thanks hairy - I've given it a go and it seems ok, so will try that.

Wonder if it will freeze...? I seem to have gone rather overboard! Although I guess I could freeze a portion of it as it is and then put creme fraiche in after I've defrosted it?

Definately freeze it without the fromage frais.

I use FF quite alot instead of creme fraiche, but I don't heat it up so much, just stir through to warm, or even just dollop on top of each dish
