cooking apple recipes please

i have a load of cooking apples and just woundering if any one has any ideas what i can make with them,
i have recipes for a apple crumble and pie just looking for something different

Dorset apple cake (sort of a victoria with sliced apples in a middle layer)

Nigela's apple cake (has rum raisins in it)

Grated apple in steamed pudding

Baked apples

chutney (beetroot?)

And remember, apples will keep in a cool dark place

apple jelly (as in strained jam)...chop and cook in enough water to stop them sticking till it all breaks down to a pulp. Strain overnight through a tea towel/muslin. If you squeeze it your jelly will be cloudy. Measure the juice. For every 600ml juice add 450g of sugar. Stir over a low heat to desolve then bring up to a rapid boil for a good ten minutes. Drop a little on to a fridge cold saucer and allow to cool.if the surface wrinkles when pushed it's ready. If not continue to boil and retest. When ready skim any scum off the top and put into warm jars. You can chuck a cinnamon stick and star anise in the jar too for a seasonal christmas pressie feel.
