Slice it down the middle, remove seeds replace with sausage meat and stuffing mixed together, wrap up with tin foil and bake in the oven for a couple of hours.

One of my favourite meals served with new potatos and gravy . Yum

I put mine in curries, or roast it with peppers onions baby tomatoes, garlic, herbs and olive oil

Then crumble some feta over it to serve

I find an easier way to 'stuff' one is to first peel it, then cut it into thick rings (take seeds out of the middle), put rings onto roasting dish and fill the middles with mince/onion/mushroom/tomato & herb mix or stuffing of choice, then roast. It then comes out in portion-sized rings rather than half-marrow sized lumps that fall apart when you try to serve.

My Mum's Stuffed Marrow is delicious.

Not sure of the exact recipe but I deduce from many years of enjoying it that she peels and halves it. Removes seeds and stuffs with browned, seasoned minced beef possibly with a bit of tinned toms / puree but not too runny. Covers with cheese sauce and bakes. Serves with rice.
