Your best TIRAMISU recipes please??

I want to make the best tiramisu ever.

I have made it before, but have lost my recipe.

From my Italian MIL. Not many layers to it, but fabulously boozy and creamy!

Add 2tbsps of rum and 2 of cognac to a cup of espresso and pour on top of a pack of sponge fingers that have been layered into a round bowl.

Mix 4tbsps of icing sugar with 3 egg yolks, 500g mascarpone and 2 tbsps rum. In a separate bowl whisk the 3 egg whites until stiff, then fold them into the mascarpone mixture.

Pour the lot on top of the coffee soaked sponge fingers.

Not only the most delicious, but also the easiest tiramisu ever!

Just realised I forgot a key bit - at the end grate a thick layer of dark chocolate over the top.

You know, that is pretty much the recipe I ended up using, mixing what I liked from a Gordon Ramsey Recipe and Nigella Lawson one!
Only, I used cognac. I also think I ussed too much cognac, it is veeeery boozy.

Hoping it will evaporate by tonight!!!
