I adore mushrooms on toast. I would have that every day for breakfast if I could. Shallow fry in butter, and garnish with parsley. Yum.
Or, I'd make a vat of mushroom soup, and maybe thicken it up a bit to make some pasta sauce.

Mushroom duxelles for flavouring casseroles, stewn etc. From memory it's very finely chopped mushrooms simmered gently with butter until you get a thickish paste. Could be worth a google.

I have the most gorgeous cream of mushroom soup I make every Autumn from a Sainsbo's mag. Its garlic, mushrooms (2 types), butter, wholemeal bread, parsley, thyme and stock stirred through with a little cream at the end.

Everyone adores it.

Thyme and butter are two things a mushroom can't do without, IMO.

Bacon and mushroom pasta a big hit here. Great with pasta, either with creme fraiche or tomato based sauce, although I prefer creme fraiche as you can taste the mushies more then.

Bonfire Mushroom Soup

3 x 250g packs of mushrooms, mix of portabella and chestnut, sliced
110g unsalted butter
2 tablespns fresh parsley
2-3 sprigs fresh thyme, leaves only
1 large clove garlic peeled and finely chopped
whole nutmeg for grating
2 thick slices wholemeal bread, crusts removed
2 litres hot chicken stock
1 x 284ml pot double cream ( NB I use half this, I find it too creamy and unshroomy otherwise )
sea salt

Stew mushrooms gently in the butter in large heavy bottomed pan and when their juices begin to run, add half the parsley, the thyme, garlic and season with sea salt, pepper and a grating of nutmeg. Soak the bread in a little of the stock and add it to the mushrooms and then add the rest of the stock. Cook for about 15 mins, uncovered at a gentle simmer, then liquidise. If freezing, freeze at this stage. Otherwise stir in cream and bring soup just up to boil test seasoning and scatter over rest of parsley.

Taffetacat, you can do the puff pastry tart without creme fraiche, just fry the mushrooms in plenty of butter and put some sort of melty cheese on the tart

Hi, yes it goes like this:

Get about a pound of mushrooms, more if you like, to go in/on 4 chicken breasts

Chop the shrooms very small, about half cm pieces (tedious but nevermind!), and saute gently with finely chopped garlic, olive oil, and thyme and loads of chopped parsely.

It'll reduce down lots, then when it's cooled down, use it to stuff in to chicken breasts and if you like, wrap a piece of bacon round them then bake for about 30 mins or till done through x
