I have 2 trout, a bag of prawns, fish stock, peas and other veg plus potatoes for the top.

How?

will be cooking this tomorrow and wondered will these ingredients make a nice pie?

You could do with some white flake fish, like cod or haddock, to be honest. Are your trout filleted? If not, be very careful of the bones - people tend to shovel fish pie in on the assumption that there won't be any bones. Also, I was once given a piece of (good) advice by a fishmonger - include a piece of smoked fish, e.g. smoked haddock, for the stronger flavour.

I seem to remember that some kind of milk-based sauce is usual in fish pies as well...

no they are whole trout in the freezer along with the prawns, and i was thinking i really need to use them and cam up with the idea of a fish pie. Maybe not such a good idea then?

It's not a bad idea apart from the bones - and you would need extra fish, I think.

Perhaps better to bake them whole in the oven in tin foil and have the prawns with them? If they are shrimps rather than prawns, then bake them in with the trout - if they are proper prawns then maybe do them in a garlic butter sauce instead.

I make a cheese sauce with my fish pie and put extra cheese on the top. I also hard boil a couple of eggs and put them in as well - makes it really lovely and rich. You definitely need some white fish and I also like to add a small portion of smoked fish as well.

I must admit, dastardly, that I find the whole hardboiled egg thing quite disappointing in fish pies - only because I loathe egg white and it looks like a nice piece of fish flake and turns out to be disgusting egg white. So I never use them and get :( when I find them in fish pies I eat. Just me though, probably!

There, knew it was some kind of white sauce - cheese sauce of course! But not too strong or you'll overwhelm the fish.

what about fishcakes? or why not cook the trout whole and make a sauce with the prawns to go with

coatgate · 23/09/2010 16:37

My fish pie is 1lb of cod and 1/2 lb of undyed smoked haddock, mixed up in a parsley sauce with 4 chopped hard boiled eggs, topped with mashed potato on top. Tis yummy. You can also put any other sort of fish in as well. But I would definitely fillet the trout (well I wouldn't as I don't know how to). Can't you just grill the trout?

DastardlyandSmugly · 23/09/2010 17:11

See I love the eggs as it adds a kind of creaminess that I find missing if I don't add them. Gosh love fish pie. Might make one this weekend.

back now and thanks for the responses. Think I will cook the trout whole and have that. Then I will buy the cod and make the prawns with it into a fish pie.

Also liking the idea of making fish cakes. Haven't done those for years and years.

Thanks all.

I made a fish bake yesterday. I used smoked haddock fillets, prawns, hollandaise sauce then sliced potatoes over the top with some grated cheese over the top and baked in over - it was delish !

I make the best ever fish pie, recipe stolen shamelessly from my friend though.

Not sure on weights, sorry.

salmon (could use trout)
smoked haddock
cod or other firm white fish
king prawns
scallops (optional)

Milk
flour
butter
capers
hard boiled eggs
fresh lemon juice
mashed potato
cheese

poach fish until almost cooked in milk. Then take the fish out and use the milk, butter and flour to make a white sauce. Flavour with lemon juice and add plenty of capers, then add quartered boiled eggs and the fish and mix in. Put in dish and top witht he mash, then sprinkle the top with grated cheese and bake in the oven until the cheese is melted and starting to brown.

It is yummy, yummy, yummy and the capers and lemon give it a lovely flavour.
