What can I do with a cod fillet?

Bought it on impulse as never really eat fish. Now can't find a recipe in any of my books for cod. Any ideas?

Cover with some tomato and chopped onions.

Make a cheese sauce and put over the fillet and bake in the oven (180 degrees for about an hour)

Tomato pasta type sauce (home made or bought); mix in a little harissa paste; lots of coriander; fish; bubble away until cooked. V easy, but v tasty Grin

cover in seasoned flour and fry. Keep warm in oven. Put butter in the pan, heat until turning brown add capers, chopped parsley and lemon juice. Pour over fish. Yummy and quick!

No, just pop it all in a pan! Lid on,and just cook til fish done. EnjoySmile

She does cod fillet with a parmesan and herby breadcrumb crusy.
It is lovely and really easy.

Roast some potatoes until nearly done, then bung the fish on top of them, and some cut up tomato and some garlic and rosemary, I add parma ham or pancetta aswell if I have it, and roast for another 15 minutes or so - serve with salad and tons of yummy mayo!!

Or chop in to chunks and put in a tomatoey stew with lots of onion, garlic, peppers and smoked paprika. One of my fave meals - if you want the recipe?

Deliah has another lovely one. Blitz 1 small garlic clove, black (stoned) olives, capers and sundried tomatoes together in the blender and put the paste on top of cod, bake in oven. Add chopped parsley and lemon juice when it comes out. You can mess around with that recipe too - add shallots or pesto, leave out some ingredients if you don't have them or like them. It always turns out well.
